Rolled and Stuffed Cube Steak

Ingredients: 3 Cube Steaks Salt n Pepper 3 Eggs 3 cloves of Garlic chopped 1 medium sized Onion or Mushrooms Bag of Spinach 1.5 Tablespoons Dijon Mustard 2 Tablespoons Balsamic Vinegar 3 strips of Bacon   Directions: First you want to turn your oven to Broil on High. Next hard boil the eggs. Now you want to heat your skillet with some coconut oil and add in the chopped onion and garlic. While the onion and garlic are cooking, salt and pepper both sides of your steaks. When the onion is translucent add in the spinach and top with mustard. Once the spinach is wilted pour your balsamic and top. Now peel the eggs and place in the middle of your cube steaks. If your steaks aren’t already nice and flat, you may want to flatten them with your hammer. Next, divide the spinach mixture evenly onto the steaks. Roll the steaks up and wrap with a piece of bacon. Steak with Creamy Mushroom Sauce

I made this  on a whim the other night and it actually turned out really good. Its funny how since we have been eating Paleo it seems really hard to make something that tastes bad. I know it can be done, but when you are using whole ingredients and that's it. It is really hard to mess something up. Steak with Creamy Mushroom Sauce Ingredients: 2 Tablespoons of Ghee (I have been messing around with using ghee lately. You could use Coconut oil.) 3 Cloves of Garlic 1 Cup of Mushrooms sliced 1/2 Onion chopped 1 Cup Coconut Milk (Full Fat) 1/4 Cup White wine Pepper Parsley Steaks (We had two NY Strips) I also added some cooked shrimp. Crab would be excellent but didn't have any on hand. Directions: Heat the butter in a pan over medium heat.  Add the onions and cook until transluscent.  Add the chopped Garlic and cook a few more minutes.
