A few months ago a purchased an awesome jerky gun. I bought it at Cabela's when I was picking up my 1/2 cow in the parking lot. Fitting right. I bought it here because they had a high quality stainless steel model. I didn't want to get plastic because I have heard they can break. But, if you just want to try out a cheaper option totally go with a plastic one. I love my jerky gun. Plus I am able to use ground beef which is so much cheaper than buying a hunk of meat. I made two different recipes. Mainly because I wanted to tweak one and came up with a whole different recipe. I ran out of Coconut Aminos so I had to improvise. It worked out though. This is like our third post in a week. Or it feels like it, but I hate sitting on recipes. So I had to post this before the weekend. I was inspired to make coconut yogurt in order to give my family some healthy probiotics. When our oldest was 1 we gave him that crap coconut yogurt from the store and of course he loved it. Then I learned how bad that stuff actually was so we stopped. So here is our coconut yogurt recipe. This makes a lot. You can easily split this recipe in half. Sweet Potato Meatballs served on Greens

Sweet Potato Meatballs served on Greens Two medium sized sweet potatoes Two pounds ground beef 1 carrot diced 1 piece of celery diced couple mushrooms diced 1 egg 1 teaspoon paprika 1 teaspoon onion powder 1 tablespoon Dijon mustard 2 tablespoons tomato paste Set oven to 400•. Peel and cut up sweet potato and steam until soft. Meanwhile cut up your veggies and add to a bowl with your meat and spices. Mash up the potato and allow to cool for a few minutes since you will be mixing with your hands. Mix everything in a large bowl and form into meatballs. Place into a baking dish. Cook for around 30 mins. depending on the size of the meatball.   Greens 4 pieces of Bacon 1 Pear cut into pieces 2-3 bunches of Kale, Spinach, Collard Greens etc. Whatever you prefer. Simple Side Dish. Love Asparagus.

This is a great, quick and easy side dish. Bacon Covered Asparagus Ingredients: Asparagus (Ends chopped off) 1/2 of an Onion Chopped (Shallots are good too) 4 Pieces of Bacon 3 Cloves of Garlic Juice from 1/2 a Lemon Coconut Oil Olive Oil Salt n Pepper First you want to start cooking your bacon in a pan. We will use the leftover grease. Then start boiling some water to cook the asparagus in. Once the water boil add the asparagus for only 4-5 minutes. Just until it becomes bright green. Strain and run under cold water to stop it from cooking anymore. Once the bacon is done, set aside. Add chopped onion and garlic to the bacon grease. I usually like to add about a tablespoon of coconut oil here. This is optional. I like to make this a little creamier and love the taste. Once the onion is translucent add in chopped up bacon. These Brussel Sprouts are Really Good!

We are back from vacation. We were in Arizona for a little over a week. It was so nice to get some time away with family and to just relax. I had plans of blogging from vacation, but let's be honest. I just wanted to relax. So I am back and have plans to start posting more here. Not every post will be a recipe and the posts will be a little small sometimes but more than just once a week.
