A few months ago a purchased an awesome jerky gun. I bought it at Cabela's when I was picking up my 1/2 cow in the parking lot. Fitting right. I bought it here because they had a high quality stainless steel model. I didn't want to get plastic because I have heard they can break. But, if you just want to try out a cheaper option totally go with a plastic one. I love my jerky gun. Plus I am able to use ground beef which is so much cheaper than buying a hunk of meat. I made two different recipes. Mainly because I wanted to tweak one and came up with a whole different recipe. I ran out of Coconut Aminos so I had to improvise. It worked out though. Our Responsibility. Part One.

I am going to try my hand at writing more posts, that aren't just food recipes. I am sure the first few posts like this will be a little scrambled as I am not a writer and my thoughts are all over the place. I am not sure where to begin. I guess I could talk about my kids and how proud I was the other day at a Birthday party my oldest, Nolan 3.5 yrs. attended. I was proud of him because there was pizza and cake to be had, but he turned it down for apples and the Paleo cookies that we brought. Of course he wanted more than the two cookies we gave him, but he was really hungry because he didn't want to eat dinner before the party. Snacks have been a struggle in our house lately. I know a couple posts ago I mentioned how large the gap was between new posts, well this beats it. It felt like 6 months but was two months. And even more than that since my last recipe post. I will admit to getting lazy. I am constantly making new recipes I just never write down what I put in it nor do I take pictures. I hope this changes. It has been awhile since I have posted a recipe, I know. I have a few more that are close to ready, just need to take pictures blah blah blah. I know you don't care about all that. Also, I have been following an autoimmune protocol to try and figure out some skin issues. I have had eczema as long as I can remember. I have been inspired to write a post like this a few times over the past couple of weeks. At the Kettlebell Gym I go to, a few of the other crazies that get beat down on the regular have been talking about a clean eating challenge. They have been asking me about recipes and what is Paleo. Sweet Potato Pancakes

Just a recipe today. Sweet Potato Pancakes Ingredients: 1/2 Cup coconut flour 1/2 teaspoon baking powder 3 eggs 1 can full fat coconut milk 1 Cup of steamed sweet potato 1 Tablespoon coconut oil Cinnamon and Nutmeg Directions: Cut the sweet potato into chunks and steam until soft. Add the coconut oil to the sweet potato and mash really good. Set aside to cool. Add the flour, baking powder and some cinnamon and nutmeg in a small bowl. In a separate bowl add the eggs and coconut milk and mix. And the sweet potato to the egg and coconut milk and mix. Then you want to slowly stir in the flour mixture. Heat a skillet to medium high and add a little more oil and cook a few minutes on each side. I also added some crushed pecans to a few of the pancakes and they were really good. Caveman Zucchini Boats

Since the weather has been so nice around Washington lately I was inspired by a boat I saw. RIGHT I think I was actually daydreaming about Moses and floating away on an ark. Maybe I should call these Zucchini Arks. Caveman Zucchini Boats (Arks) Ingredients: 4-5 nice sized zucchinis 1 pound of italian suasage. Casings removed. 1/2 chopped onion 1 can diced tomatoes drained handful of chopped olives 1 Cup of chopped mushrooms 3 cloves of chopped garlic Parsley Oregano Basil Pepper Directions: Heat oven to 375•. Cut zucchinis in half and scoop out the insides so it looks like a little canoe. Great, now I am calling them canoes. Set the scooped out guts aside. Place the zucchini open side down onto a pan lined with parchment.  Bake for 15 minutes. Add the onion to a frying pan with a little coconut oil. Cook until translucent. Add the sausage. Barefoot or Minimal footwear. And some Jerky!

I am kind of getting obsessed with this minimal/barefoot style shoe thing. It started with a pair of Nike Sneakerboats. They are a aqua socks. I really like them, but my feet get a little sweaty when wearing them for an extended period. And they actually look like regular shoes. When I bought them they were on sale cause they had already been discontinued. I do however like to wear them to the gym for days I am lifting weights. They give a little protection and are pretty comfy as long as you aren't wearing them for an extended period of time. I then bought a pair of Nike Free 7.0 shoes. I really wanted the 3.0 version, but they just did not feel very stable. So I went with the 7.0. They are OK for daily wearing, but are not barefoot style shoes. How strict do You Have to be with a Side of Cabbage and Meat Muffins

I am always inspired to write a new blog post after listening to The Paleo Solution podcast. This morning is no different. Robb Wolf was asked a question about cheat meals. This is an interesting topic and I will try not to ramble to much, but I have a few thoughts and totally agree with Robb on this one. First off, I hate how its called a cheat meal. When I was following a more Primal Blueprint approach which is an 80% to 20% lifestyle plan I found myself cheating to much. I do agree that as long as you are following a Paleo type diet at 80% compliance, than you are doing great and probably doing a lot better than you were before. But I wanted to do better and I was allowing myself to slip to much. I wanted to be eating better. I know what I am supposed...

Valentine’s Day

I thought I would share with everyone what we at for Valentine's Day this year. First I should say that I took the day off from work to spend it with my family. I had planned a few things to do, but weather would not allow. No worries though. It was nice to get an extra day at home. Love long weekends. For breakfast I made our Oven Baked Zucchini Hash. And had leftovers pancakes. For Lunch we just had simple leftovers. I ate some salmon while Nolan and Jamie ate some leftover Zucchini Hash. For a little appetizer I made  up some chocolate ganache Ingredients: 4 oz 70% dark chocolate, finely chopped 1 cup coconut milk Procedure: Place the chocolate in a bowl.
