Rolled and Stuffed Cube Steak

Ingredients: 3 Cube Steaks Salt n Pepper 3 Eggs 3 cloves of Garlic chopped 1 medium sized Onion or Mushrooms Bag of Spinach 1.5 Tablespoons Dijon Mustard 2 Tablespoons Balsamic Vinegar 3 strips of Bacon   Directions: First you want to turn your oven to Broil on High. Next hard boil the eggs. Now you want to heat your skillet with some coconut oil and add in the chopped onion and garlic. While the onion and garlic are cooking, salt and pepper both sides of your steaks. When the onion is translucent add in the spinach and top with mustard. Once the spinach is wilted pour your balsamic and top. Now peel the eggs and place in the middle of your cube steaks. If your steaks aren’t already nice and flat, you may want to flatten them with your hammer. Next, divide the spinach mixture evenly onto the steaks. Roll the steaks up and wrap with a piece of bacon. OK, so I tried to be a little more creative with the title of this post. I just love all the names of some local Pho restaurants. My favorite is What the Pho? hehe to good. Anyway I really love Pho and was starting to make it before our switch over to Paleo. But I haven't made it since. I have been wanting to do more with our broth that we make then just drinking it or making stews with it, so I thought of Pho. I wouldn't really call this Pho though. I put some little meatballs in it and some veggies. I guess it would be more of a soup with sweet potato noodles. Yes, I said sweet potato noodles. UPDATE: I have heard from a few people that this recipe isn't turning out for them. Most said it is to runny. I have tried this recipe a few times and it always turns out. Not sure if its the brand of milk or flour. Maybe add your milk slowly and try to get it to the right thickness. Thanks. This post will be super simple today. No long back story or anything. Just a straight up yummy recipe. Enjoy. I am adding a little side note here: I have had a few people say that the batter is to runny. The measurements below are correct. The only thing I can think of is that my brand of coconut flour and milk make the difference. Coconut Salmon Patties with Avocado Sauce

We got our first food processor the other day and I have been using it a ton. This recipe was inspired by the need to use it more and more. So without further ado. Salmon Patties 2 medium sized fillets (or one large fillet, see pic below) 3 eggs 1/2 Cup shredded coconut flakes 1/4 Cup almond meal 2 celery stalks 1 teaspoon ginger powder 2 Tablespoons yellow mustard 2 Tablespoons coconut aminos splash of fish sauce (optional) pinch of red pepper flakes lemon salt n pepper Directions: This couldn't be any easier. Well unless you bought it out of the freezer section and tossed it in the microwave, but that just sounds gross. Preheat oven to 350°. Put your salmon fillets on a pan lined with parchment paper and sprinkle with some salt n pepper. Cut the lemon in half, cut half into slices and place on salmon. Toss in the oven for around 15 mins. I have been pretty busy lately with stuff for the blog, even though you haven't seen any of it yet. I have come up with a few more Tshirt designs that will be uploaded to my shop soon. I have also filmed my first episode of Family Living Simple Cooking Show. I might have to come up with a different name, but it is filmed and I am editing it now. The  sound quality is pretty bad, but I am looking into better options. So look out for more cooking episodes to come. Also, I have been working on a children's book. Not going to divulge to much, but it is Paleo based and is a coloring book. I might have found an illustrator, but the illustrations will take awhile. Sweet Potato Pancakes

Just a recipe today. Sweet Potato Pancakes Ingredients: 1/2 Cup coconut flour 1/2 teaspoon baking powder 3 eggs 1 can full fat coconut milk 1 Cup of steamed sweet potato 1 Tablespoon coconut oil Cinnamon and Nutmeg Directions: Cut the sweet potato into chunks and steam until soft. Add the coconut oil to the sweet potato and mash really good. Set aside to cool. Add the flour, baking powder and some cinnamon and nutmeg in a small bowl. In a separate bowl add the eggs and coconut milk and mix. And the sweet potato to the egg and coconut milk and mix. Then you want to slowly stir in the flour mixture. Heat a skillet to medium high and add a little more oil and cook a few minutes on each side. I also added some crushed pecans to a few of the pancakes and they were really good. Quick Ground Meat Curry

Yesterday we got back from a long weekend of going to my Sister's Graduation and helping her move. It was a 5 hour drive through eastern Washington. Needless to say when we got home we didn't have a lot of food around the house and weren't in the mood to go shopping or take the time to cook a meal. I decided to make a curry dish since we had 1pound of ground beef and 1pound of ground buffalo. We had burgers for lunch and dinner the night before so that wasn't happening again. We also had a sweet potato and a head of cauliflower so I roasted these and it turned out good enough to share with you. Valentine’s Day

I thought I would share with everyone what we at for Valentine's Day this year. First I should say that I took the day off from work to spend it with my family. I had planned a few things to do, but weather would not allow. No worries though. It was nice to get an extra day at home. Love long weekends. For breakfast I made our Oven Baked Zucchini Hash. And had leftovers pancakes. For Lunch we just had simple leftovers. I ate some salmon while Nolan and Jamie ate some leftover Zucchini Hash. For a little appetizer I made  up some chocolate ganache Ingredients: 4 oz 70% dark chocolate, finely chopped 1 cup coconut milk Procedure: Place the chocolate in a bowl. Snacks and a little info on Fasting.

Snacks is another thing that is sitting right under our noses, yet w always struggle with. We do to. Its easy to just grab something and just eat it. Sadly, most of the time when you just grab something and eat it, its not the healthy for you. Like right now I am still at work after hours and am hungry. There is a package of chocolate covered macadamia nuts behind me. I could easily grab one and just mound on it. I planned a little better than that. I have home made beef jerky to eat. I also packed a smoothie this morning. If I haven't done these things I would probably be eating 5 of those chocolate things right now. This was one thing that I struggled with while switching to this Paleo lifestyle. But now that we eat right around 100% Paleo, I find that I can eat bigger...
