A few months ago a purchased an awesome jerky gun. I bought it at Cabela's when I was picking up my 1/2 cow in the parking lot. Fitting right. I bought it here because they had a high quality stainless steel model. I didn't want to get plastic because I have heard they can break. But, if you just want to try out a cheaper option totally go with a plastic one. I love my jerky gun. Plus I am able to use ground beef which is so much cheaper than buying a hunk of meat. I made two different recipes. Mainly because I wanted to tweak one and came up with a whole different recipe. I ran out of Coconut Aminos so I had to improvise. It worked out though. Rolled and Stuffed Cube Steak

Ingredients: 3 Cube Steaks Salt n Pepper 3 Eggs 3 cloves of Garlic chopped 1 medium sized Onion or Mushrooms Bag of Spinach 1.5 Tablespoons Dijon Mustard 2 Tablespoons Balsamic Vinegar 3 strips of Bacon   Directions: First you want to turn your oven to Broil on High. Next hard boil the eggs. Now you want to heat your skillet with some coconut oil and add in the chopped onion and garlic. While the onion and garlic are cooking, salt and pepper both sides of your steaks. When the onion is translucent add in the spinach and top with mustard. Once the spinach is wilted pour your balsamic and top. Now peel the eggs and place in the middle of your cube steaks. If your steaks aren’t already nice and flat, you may want to flatten them with your hammer. Next, divide the spinach mixture evenly onto the steaks. Roll the steaks up and wrap with a piece of bacon. I know a couple posts ago I mentioned how large the gap was between new posts, well this beats it. It felt like 6 months but was two months. And even more than that since my last recipe post. I will admit to getting lazy. I am constantly making new recipes I just never write down what I put in it nor do I take pictures. I hope this changes. “Make it Paleo” Book Review and Giveaway!!!!

OK, so this post is long overdue. I can easily say this is one of my favorite cookbooks, Paleo or not. I can just sit here and flip through this book for tons of inspiration. The pictures in this book have set the standard for all cookbooks that come after. Bill and Haley from The Food Lovers Primal Palate really set the bar high. With over 200 recipes that anyone can create with the amazing directions and pictures this is money well spent. I bought this book when it originally came out and even with all the cookbooks that I have purchased since, this one still gets used the most. Just listen to a few of these recipes... It has been awhile since I have posted a recipe, I know. I have a few more that are close to ready, just need to take pictures blah blah blah. I know you don't care about all that. Also, I have been following an autoimmune protocol to try and figure out some skin issues. I have had eczema as long as I can remember. OK, so I tried to be a little more creative with the title of this post. I just love all the names of some local Pho restaurants. My favorite is What the Pho? hehe to good. Anyway I really love Pho and was starting to make it before our switch over to Paleo. But I haven't made it since. I have been wanting to do more with our broth that we make then just drinking it or making stews with it, so I thought of Pho. I wouldn't really call this Pho though. I put some little meatballs in it and some veggies. I guess it would be more of a soup with sweet potato noodles. Yes, I said sweet potato noodles. Zucchini Pasta with Avocado Cream Sauce

I made this on a whim and didn't do a good job of taking pictures. But, it is a pretty simple recipe. Zucchini Pasta with Avocado Cream Sauce Ingredients: 4 Small Zucchini 2 Tablespoons of coconut oil 1 Avocado Juice from 1/2 a Lemon Salt n Pepper Handful fresh basil 2 Tablespoons olive oil 3 Tablespoons coconut milk or just more olive oil Olives to top pasta with, chopped. Directions: Cut the zucchini into noodles. You can do this by hand or use a mandolin. Toss the Zucchini with salt and set aside. This will help it dry out a little. You can now chop your olives and start the cream sauce. Add your avocado, lemon juice,olive oil and coconut milk and blend in your food processor or blender until creamy. Add in your basil and more olive oil if needed. Heat a pan with 2 coconut oil and toss in zucchini. You will only need to cook it a few minutes and medium heat. I...

This is like our third post in a week. Or it feels like it, but I hate sitting on recipes. So I had to post this before the weekend. I was inspired to make coconut yogurt in order to give my family some healthy probiotics. When our oldest was 1 we gave him that crap coconut yogurt from the store and of course he loved it. Then I learned how bad that stuff actually was so we stopped. So here is our coconut yogurt recipe. This makes a lot. You can easily split this recipe in half. I have been wanting to write this post for awhile. I will probably spend more time on it then necessary, but I have so many thoughts on this subject. Your kids should be eating Paleo, too. A little background. Some of you might already know a little bit about our journey, but for all of our newer followers here you go. I (Kyle) started eating Paleo about 3 years ago.  We found out we were pregnant with Nolan and this kicked my butt into gear to eat and live a healthier life.  We had tried gluten and dairy free in the past, but we weren't dieting, we just wanted to feel better.
