Rolled and Stuffed Cube Steak

Ingredients: 3 Cube Steaks Salt n Pepper 3 Eggs 3 cloves of Garlic chopped 1 medium sized Onion or Mushrooms Bag of Spinach 1.5 Tablespoons Dijon Mustard 2 Tablespoons Balsamic Vinegar 3 strips of Bacon   Directions: First you want to turn your oven to Broil on High. Next hard boil the eggs. Now you want to heat your skillet with some coconut oil and add in the chopped onion and garlic. While the onion and garlic are cooking, salt and pepper both sides of your steaks. When the onion is translucent add in the spinach and top with mustard. Once the spinach is wilted pour your balsamic and top. Now peel the eggs and place in the middle of your cube steaks. Really Quick!

Quick meal ideas. I am sure this is a common problem in many households. I know it is in ours. The biggest problem is that I like to cook and am always trying out new recipes. This can be a little time consuming. And while I get home around 6, Nolan our son is already hungry. And he is not very patient when it comes to food. Jamie tries to help out the best she can, but when you have a 21 month old running around the house getting into everything cooking isn't the easiest task to complete. So, lately we have been trying to come up with quicker meal options. My next few posts will have ideas and recipes for quick meals.
