OK, so I tried to be a little more creative with the title of this post. I just love all the names of some local Pho restaurants. My favorite is What the Pho? hehe to good. Anyway I really love Pho and was starting to make it before our switch over to Paleo. But I haven't made it since. I have been wanting to do more with our broth that we make then just drinking it or making stews with it, so I thought of Pho. I wouldn't really call this Pho though. I put some little meatballs in it and some veggies. I guess it would be more of a soup with sweet potato noodles. Yes, I said sweet potato noodles. Sweet Potato Meatballs served on Greens

Sweet Potato Meatballs served on Greens Two medium sized sweet potatoes Two pounds ground beef 1 carrot diced 1 piece of celery diced couple mushrooms diced 1 egg 1 teaspoon paprika 1 teaspoon onion powder 1 tablespoon Dijon mustard 2 tablespoons tomato paste Set oven to 400•. Peel and cut up sweet potato and steam until soft. Meanwhile cut up your veggies and add to a bowl with your meat and spices. Mash up the potato and allow to cool for a few minutes since you will be mixing with your hands. Mix everything in a large bowl and form into meatballs. Place into a baking dish. Cook for around 30 mins. depending on the size of the meatball.   Greens 4 pieces of Bacon 1 Pear cut into pieces 2-3 bunches of Kale, Spinach, Collard Greens etc. Whatever you prefer. Paleo Casserole

I have been pretty busy lately with stuff for the blog, even though you haven't seen any of it yet. I have come up with a few more Tshirt designs that will be uploaded to my shop soon. I have also filmed my first episode of Family Living Simple Cooking Show. I might have to come up with a different name, but it is filmed and I am editing it now. The  sound quality is pretty bad, but I am looking into better options. So look out for more cooking episodes to come. Also, I have been working on a children's book. Not going to divulge to much, but it is Paleo based and is a coloring book. I might have found an illustrator, but the illustrations will take awhile. Pot Pie and Some Monday Morning Ramblings.

I am sitting here in front of my computer eating eggs with sausage, mushrooms, sauerkraut (which is a great natural probiotic) and a failed attempt at sweet potato muffins. I will work on that recipe again this week. Oh, I also have a big cup of decaf coffee with coconut milk. So good. While I munch away I am trying to think of my next great blog post. "Great" is kind of over exaggerating. I am doing this blog as a way to share with the interested folks out there how easy it is to live an overall better life. And this is what I think is better. You don't have to agree with me. You might think growing your own garden or eating a Paleo diet is crap. That's fine. I am still going to write this blog. And someone will find it helpful.
