Ground Beef Jerky Recipe (Nightshade Free)

A few months ago a purchased an awesome jerky gun. I bought it at Cabela's when I was picking up my 1/2 cow in the parking lot. Fitting right. I bought it here because they had a high quality stainless steel model. I didn't want to get plastic because I have heard they can break. But, if you just want to try out a cheaper option totally go with a plastic one. I love my jerky gun. Plus I am able to use ground beef which is so much cheaper than buying a hunk of meat. I made two different recipes. Mainly because I wanted to tweak one and came up with a whole different recipe. I ran out of Coconut Aminos so I had to improvise. It worked out though. I know a couple posts ago I mentioned how large the gap was between new posts, well this beats it. It felt like 6 months but was two months. And even more than that since my last recipe post. I will admit to getting lazy. I am constantly making new recipes I just never write down what I put in it nor do I take pictures. I hope this changes. This post wont have the best photos, I took them with my iPhone, but its a recipe and it was really good. Hope you enjoy. Sweet Potato Meatballs served on Greens

Sweet Potato Meatballs served on Greens Two medium sized sweet potatoes Two pounds ground beef 1 carrot diced 1 piece of celery diced couple mushrooms diced 1 egg 1 teaspoon paprika 1 teaspoon onion powder 1 tablespoon Dijon mustard 2 tablespoons tomato paste Set oven to 400•. Peel and cut up sweet potato and steam until soft. Meanwhile cut up your veggies and add to a bowl with your meat and spices. Mash up the potato and allow to cool for a few minutes since you will be mixing with your hands. Mix everything in a large bowl and form into meatballs. Place into a baking dish. Cook for around 30 mins. depending on the size of the meatball.   Greens 4 pieces of Bacon 1 Pear cut into pieces 2-3 bunches of Kale, Spinach, Collard Greens etc. Whatever you prefer. I have been pretty busy lately with stuff for the blog, even though you haven't seen any of it yet. I have come up with a few more Tshirt designs that will be uploaded to my shop soon. I have also filmed my first episode of Family Living Simple Cooking Show. I might have to come up with a different name, but it is filmed and I am editing it now. The  sound quality is pretty bad, but I am looking into better options. So look out for more cooking episodes to come. Also, I have been working on a children's book. Not going to divulge to much, but it is Paleo based and is a coloring book. I might have found an illustrator, but the illustrations will take awhile. Quick Ground Meat Curry

Yesterday we got back from a long weekend of going to my Sister's Graduation and helping her move. It was a 5 hour drive through eastern Washington. Needless to say when we got home we didn't have a lot of food around the house and weren't in the mood to go shopping or take the time to cook a meal. I decided to make a curry dish since we had 1pound of ground beef and 1pound of ground buffalo. We had burgers for lunch and dinner the night before so that wasn't happening again. We also had a sweet potato and a head of cauliflower so I roasted these and it turned out good enough to share with you. Steak with Creamy Mushroom Sauce

I made this  on a whim the other night and it actually turned out really good. Its funny how since we have been eating Paleo it seems really hard to make something that tastes bad. I know it can be done, but when you are using whole ingredients and that's it. It is really hard to mess something up. Steak with Creamy Mushroom Sauce Ingredients: 2 Tablespoons of Ghee (I have been messing around with using ghee lately. You could use Coconut oil.) 3 Cloves of Garlic 1 Cup of Mushrooms sliced 1/2 Onion chopped 1 Cup Coconut Milk (Full Fat) 1/4 Cup White wine Pepper Parsley Steaks (We had two NY Strips) I also added some cooked shrimp. Crab would be excellent but didn't have any on hand. Directions: Heat the butter in a pan over medium heat.  Add the onions and cook until transluscent.  Add the chopped Garlic and cook a few more minutes. Another Quick Recipe. Crockpot time!

I said in my last blog that I was going to do a few posts on quick meal ideas. Well this is a quick post and a quick meal. Beef Stew Ingredients: 1 Onion 4 cloves of garlic 3 carrots 3 sticks of celery 3 pounds of stew meat 1 can of diced tomatoes Oregano Dried Basil Marjoram Salt n Pepper 1 cup of chicken 1 cup of beef broth 1 cup of red wine Directions: As you can see in the image, I cut up all the veggies and added the spices together the night before. All I had to do in the morning was add the veggies, meat, broth and wine to the slow cooker than leave for work. I could have even put it in the slow cooker before bed and had stew in the morning. The reason I added a cup of beef and chicken broth is because I find beef broth is over powering so I wanted to smooth it out.
