Sweet Potato Meatballs served on Greens

Sweet Potato Meatballs served on Greens

Two medium sized sweet potatoes
Two pounds ground beef
1 carrot diced
1 piece of celery diced
couple mushrooms diced
1 egg
1 teaspoon paprika
1 teaspoon onion powder
1 tablespoon Dijon mustard
2 tablespoons tomato paste

Set oven to 400•. Peel and cut up sweet potato and steam until soft. Meanwhile cut up your veggies and add to a bowl with your meat and spices. Mash up the potato and allow to cool for a few minutes since you will be mixing with your hands. Mix everything in a large bowl and form into meatballs. Place into a baking dish. Cook for around 30 mins. depending on the size of the meatball.

 

Greens

4 pieces of Bacon
1 Pear cut into pieces
2-3 bunches of Kale, Spinach, Collard Greens etc. Whatever you prefer.
Salt n Pepper
Olive Oil
Balsamic Vinegar
I usually use onion in this dish, but we have cut them out while Jamie is breastfeeding.
Handful of mushrooms sliced. I used crimini

Cook bacon and set aside. Add the pear and mushroom to the bacon grease. Add a little salt n pepper and cook until tender. Add greens and a little more salt n pepper. Then chop up the bacon and add back into pan. Cook until greens begin to wilt. Turn off the stove and pour as much olive oil as you want over the greens and add a little balsamic. Mix and serve.

  3. Meatballs were wonderful! I used 1 lb grassfed ground beef & 1 lb ground pork from USWellness. I added in a little salt & pepper, and 1 tsp of crushed garlic. Loved the mustard & tomato paste combo, would have never thought to combine the two! The sweet potatoes were the bomb in them :)

  4. These meatballs were amazing.. I can’t wait to make them again soon. I used home made bbq sauce instead of tomato paste. Yum yum yum. :)

  5. Made these yesterday- they were awesome! Dijon mustard is listed twice in the meatball ingredients, but I only used 1 tablespoon (is that a typo?). I will definitely make these again, and again, and again….
