Orange Ground Beef

I know a couple posts ago I mentioned how large the gap was between new posts, well this beats it. It felt like 6 months but was two months. And even more than that since my last recipe post. I will admit to getting lazy. I am constantly making new recipes I just never write down what I put in it nor do I take pictures. I hope this changes. This post wont have the best photos, I took them with my iPhone, but its a recipe and it was really good. Hope you enjoy.

Orange Ground Beef

Ingredients:
1/2 Cup Toasted Coconut Flakes (toast at 300• for about 15 minutes stirring frequently.)
2 lbs Ground Beef
1/2 Cup Cashews
3-5 Stalks of Celery Chopped (you could use bell pepper)
1 Onion Sliced
Juice of 2 oranges
1 Cup Bone Broth
1.5 Cups Pineapple Chunks
1/2 teaspoon Garlic Powder
2 teaspoons Coconut Aminos
1.5 Tablespoons Arrowroot Powder
1/4 teaspoon Cardamom
1 teaspoon Tumeric
1 teaspoon Ginger powder
1/4 teaspoon Coriander
1/2 teaspoon Mustard Powder
Salt
Coconut oil for cooking.

Directions:
Add coconut oil to your large pan and add in the Onion, Celery and Ground Beef. In a separate bowl add your Orange Juice and Broth. Add in your arrowroot powder while stirring with a whisk. Mix well and add to pan once the meat is brown. Add in your spices and Coconut Aminos. Bring to boil and cook for 5-7 minutes or until the sauce begins to thicken. Add in your Pineapple and simmer for about 7 minutes.

Toss in a bowl and top with your toasted coconut and cashews. This would also go really well with Cauliflower Rice.

  1. How do you make your bone broth? I assume this would be full of gelatins and very good for you?

    • Yes, bone broth is super healthy. All I do is get some grass fed soup bones, toss them in a slow cooker with a little salt, 1 tbsp apple cider vinegar and some veggie scraps. Like onion, carrots, celery, I also like to put in garlic for flavor. Set to low and let it go for 12-24 hrs. So easy and incredibly healthy. Make sure the bones are from 100% grass fed animals though. You can do chicken, beef, pork etc.

      And coconut aminos tastes like soy sauce, but is made from coconuts. You should be able to find it at your local health food store or can order it from amazon. Its made by coconut secrets. Let me know if you have any other questions.
