Ground Beef Jerky Recipe (Nightshade Free)

A few months ago a purchased an awesome jerky gun. I bought it at Cabela’s when I was picking up my 1/2 cow in the parking lot. Fitting right. I bought it here because they had a high quality stainless steel model. I didn’t want to get plastic because I have heard they can break. But, if you just want to try out a cheaper option totally go with a plastic one. I love my jerky gun. Plus I am able to use ground beef which is so much cheaper than buying a hunk of meat.

I made two different recipes. Mainly because I wanted to tweak one and came up with a whole different recipe. I ran out of Coconut Aminos so I had to improvise. It worked out though. Although I have no idea what to call the recipes.

Also, I didn’t use any nightshades because I am in the middle of an elimination diet. Feel free to add paprika or cayenne. I would if I could.

Jerky Recipe One

1 Pound Ground Beef
4 Tablespoons Coconut Aminos
1/2 Teaspoon Garlic Powder
1/2 Teaspoon Onion Powder
1/4 Teaspoon Cumin
1 Teaspoon Salt
Pepper to taste

Jerky Recipe Two

2 Pound Ground Beef
1 Tablespoon Balsamic Vinegar
1 Tablespoon Olive Oil
1 Tablespoon Fish Sauce
2 Teaspoons Salt
1/2 Teaspoon Mustard Powder
1 Teaspoon Garlic Powder
1 Teaspoon Onion Powder

These are the same for both recipes. Mix all the ingredients together and let it marinate overnight. When you are ready set up your dehydrator to the brands recommended setting for Jerky. We have an Excalibur and set it to 155•. Stuff your jerky gun with the meat and (I can’t decide what word to use here) lay down the jerky onto your tray. Place in your dehydrator and cook for 6-10 hrs. The time will vary depending on your brand of dehydrator and thickness of jerky. I have done two different shapes of jerky. The first was just flat jerky that was about 1/2″ thick. I cooked this for 6 hrs. The second batch was a tube and cooked for about 7.5 hours. I prefer the tube style. You will also know your jerky is done if you can bend it and it starts to crack. Also, it will no longer be pink in the middle.

I also want to mention, if you don’t have a dehydrator or jerky gu. You can still make these. Flatten out the jerky on an oven pan. Just place the meat between two pieces of parchment paper and flatten with a rolling pin. Then toss in your oven to cook. I have never tried this method, but if you google it, it’s seems really easy.
