Zucchini Pasta with Avocado Cream Sauce Ingredients: 4 Small Zucchini 2 Tablespoons of coconut oil 1 Avocado Juice from 1/2 a Lemon Salt n Pepper Handful fresh basil 2 Tablespoons olive oil 3 Tablespoons coconut milk or just more olive oil Olives to top pasta with, chopped. Directions: Cut the zucchini into noodles. You can do this by hand or use a mandolin. Toss the Zucchini with salt and set aside. This will help it dry out a little. You can now chop your olives and start the cream sauce. Add your avocado, lemon juice,olive oil and coconut milk and blend in your food processor or blender until creamy. Add in your basil and more olive oil if needed. Heat a pan with 2 coconut oil and toss in zucchini. You will only need to cook it a few minutes and medium heat. I...

I was inspired to make coconut yogurt in order to give my family some healthy probiotics. When our oldest was 1 we gave him that crap coconut yogurt from the store and of course he loved it. Then I learned how bad that stuff actually was so we stopped. So here is our coconut yogurt recipe. This makes a lot. You can easily split this recipe in half. Read More Post a comment (0)This post will be super simple today. No long back story or anything. Just a straight up yummy recipe. Enjoy. Apple Pie Pancakes Ingredients: 3 eggs 1 teaspoon vanilla 1 Tablespoon honey (optional) 1 1/2 Cups coconut milk 1/2 Cup coconut flour Dash of salt 1/2 teaspoon baking soda 1 Tablespoon cinnamon 1/4 teaspoon nutmeg 2 apples Directions: Core your apple and slice it into rings. You can do this by hand or using your mandoline. I cut it at about 1/8 to 1/4" thicknesses. The thinner the quicker it cooks. Beat your eggs until frothy then mix in the rest of your wet ingredients. Add all your dry ingredients together and mix. I like to sift my coconut flour. Gently mix the dry ingredients into your wet ingredients. Add oil to a pan and dip your apple rings into your batter and cook like regular pancakes. Top with some almond butter or maple syrup. Enjoy!

Read More Post a comment (0)We got our first food processor the other day and I have been using it a ton. This recipe was inspired by the need to use it more and more. So without further ado. Salmon Patties 2 medium sized fillets (or one large fillet, see pic below) 3 eggs 1/2 Cup shredded coconut flakes 1/4 Cup almond meal 2 celery stalks 1 teaspoon ginger powder 2 Tablespoons yellow mustard 2 Tablespoons coconut aminos splash of fish sauce (optional) pinch of red pepper flakes lemon salt n pepper Directions: This couldn't be any easier. Well unless you bought it out of the freezer section and tossed it in the microwave, but that just sounds gross. Preheat oven to 350°. Put your salmon fillets on a pan lined with parchment paper and sprinkle with some salt n pepper. Cut the lemon in half, cut half into slices and place on salmon. Toss in the oven for around 15 mins. Far too many of my friends & acquaintances have had trouble conceiving a child. Conception can be an ugly & destroying word. I also experienced this pain & at times felt anger. Before becoming pregnant with Nolan my first child – Kyle and I had been “trying” for 7 months or so. During this time it felt like I would never get pregnant.
